Meatloaf Cupcakes
- 2 lbs Linzer Ranch American Wagyu ground beef
- 1/2 cup finely diced sweet yellow onion
- 1/4 cup finely diced celery
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/3 cup milk
- 2 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 1 tbsp Dijon or stone-ground mustard
- 2 tsp sea salt
- 1 tsp freshly cracked black pepper
- 1 tsp smoked paprika (optional)
- 2 large eggs
- 2 tbsp fresh chopped parsley
- Beef tallow or butter, for sautéing
Buttermilk Mashed Potato “Frosting”
- 2 lbs Yukon Gold potatoes, peeled and cubed
- 4 tbsp butter
- 1/4 cup buttermilk or raw cream
- 1/4 cup sour cream or cultured cream
- Sea salt and white pepper, to taste
- (Optional) 1/4 cup grated cheddar or smoked gouda, for richness

Instructions
- Preheat oven to 375°F. Grease a 12-cup muffin tin with beef tallow or butter. Or use cupcake inserts
- Make the mashed potatoes first:
- Boil potatoes in salted water until tender (about 15 minutes). Drain well.
- Add butter, buttermilk, and sour cream. Mash until silky and smooth.
- Season with sea salt and white pepper.
- Optional: Stir in grated cheese for extra richness.
- Set aside to cool slightly. Place in a piping or zip-top bag if desired.
- Sauté the vegetables:
- Heat beef tallow or butter in a skillet over medium heat.
- Sauté onion and celery until soft (5–6 minutes). Add garlic and cook 1 more minute.
- Remove from heat and let cool.
- Mix the meatloaf:
- In a large bowl, combine ground beef, sautéed veggies, breadcrumbs, milk, tomato paste, Worcestershire sauce, mustard, eggs, salt, pepper, paprika, and parsley.

- Bake for 30–40 minutes, or until internal temperature reaches 160°F. Let rest for 5 minutes.
- Top with mashed potatoes:
- Pipe or spoon mashed potatoes onto each meatloaf cupcake, swirling like frosting.
